Lemon Custard Cake

For the Crust:

  • 1 cup all-purpose flour
  • 4 large eggs, separated
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 1/2 cups whole milk
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease an 8-inch baking dish.
  2. In a bowl, whisk egg yolks and sugar until pale. Add melted butter, lemon juice, zest, and vanilla. Mix well.
  3. Gradually add flour and salt, alternating with milk, until smooth.
  4. In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter.
  5. Pour batter into the prepared dish. Bake for 40-45 minutes until golden and set.
  6. Let cool completely, then dust with powdered sugar before serving.
