Luscious Lemon-Lime Cherry Pistachio Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1 cup pitted cherries, chopped
  • 1/2 cup pistachios, chopped
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • Zest of 2 limes

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in lemon juice, lime juice, vanilla extract, lemon zest, and lime zest.
  6. Fold in chopped cherries and pistachios.
  7. Pour the mixture over the crust and bake for 50-60 minutes or until set.
  8. Cool completely, then refrigerate for at least 4 hours before serving.

Notes

For a gluten-free version, use gluten-free graham crackers. Store in the refrigerator for up to 5 days.
