- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1 cup pitted cherries, chopped
- 1/2 cup pistachios, chopped
- 1 teaspoon vanilla extract
- Zest of 2 lemons
- Zest of 2 limes
Instructions
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in lemon juice, lime juice, vanilla extract, lemon zest, and lime zest.
- Fold in chopped cherries and pistachios.
- Pour the mixture over the crust and bake for 50-60 minutes or until set.
- Cool completely, then refrigerate for at least 4 hours before serving.
Notes
For a gluten-free version, use gluten-free graham crackers. Store in the refrigerator for up to 5 days.
