Lemon Meringue Pie Cannolis

For the Crust:

  • 12 cannoli shells
  • 1 cup ricotta cheese
  • 1/2 cup mascarpone cheese
  • 1/3 cup powdered sugar
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 2 egg whites
  • 1/4 cup granulated sugar
  • 1/4 tsp cream of tartar

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ricotta, mascarpone, powdered sugar, lemon zest, lemon juice, and vanilla until smooth.
  2. Fill cannoli shells with the lemon ricotta mixture using a piping bag or spoon.
  3. In a separate bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar and beat until stiff peaks form.
  4. Pipe or spoon meringue onto the ends of each cannoli.
  5. Use a kitchen torch to lightly brown the meringue, or place under a broiler for 1-2 minutes until golden.
  6. Serve immediately or chill until ready to serve.
