Lemon Meringue Pie Cannolis

For the Crust:

  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1 lemon, zested and juiced
  • 1/2 teaspoon vanilla extract
  • 6 pre-made cannoli shells
  • 2 egg whites
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ricotta cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract until smooth.
  2. Fill each cannoli shell with the ricotta mixture using a piping bag or spoon.
  3. In a separate bowl, beat egg whites with cream of tartar until soft peaks form.
  4. Gradually add granulated sugar while continuing to beat until stiff peaks form.
  5. Pipe or spoon meringue onto the filled cannolis.
  6. Use a kitchen torch to lightly brown the meringue or place under a broiler for 1-2 minutes until golden.
