For the Crust:
- 1 cup ricotta cheese
- 1/2 cup powdered sugar
- 1 lemon, zested and juiced
- 1/2 teaspoon vanilla extract
- 6 pre-made cannoli shells
- 2 egg whites
- 1/4 cup granulated sugar
- 1/4 teaspoon cream of tartar
Instructions
1. Prepare the Crust:
- In a bowl, mix ricotta cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract until smooth.
- Fill each cannoli shell with the ricotta mixture using a piping bag or spoon.
- In a separate bowl, beat egg whites with cream of tartar until soft peaks form.
- Gradually add granulated sugar while continuing to beat until stiff peaks form.
- Pipe or spoon meringue onto the filled cannolis.
- Use a kitchen torch to lightly brown the meringue or place under a broiler for 1-2 minutes until golden.
