- 8 oz spaghetti
- 1 cup ricotta cheese
- 2 tablespoons lemon juice
- Zest of 1 lemon
- 2 cups fresh spinach
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente.
- In a large bowl, mix the ricotta cheese, lemon juice, and lemon zest until smooth.
- Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
- Add fresh spinach to the pan and cook until wilted.
- Drain the pasta and reserve some pasta water.
- Toss the cooked pasta with the ricotta mixture, adding reserved pasta water as needed for creaminess.
- Stir in the spinach and garlic mixture. Season with salt and pepper.
- Serve immediately, garnished with extra lemon zest if desired.
