Lemon Zucchini Heaven Bread

A moist and flavorful zucchini bread with a refreshing lemon twist, perfect for breakfast or a snack.

For the Crust:

  • 2 cups grated zucchini
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9Γ—5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugars, oil, eggs, lemon juice, lemon zest, and vanilla until well combined.
  4. Stir the wet ingredients into the dry ingredients until just combined. Fold in grated zucchini.
  5. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  6. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
