For the Crust:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 cups diced apples (about 2 medium apples)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Fold in diced apples.
- Spread half of the batter into the prepared pan. In a small bowl, mix brown sugar, cinnamon, and walnuts (if using). Sprinkle half of this mixture over the batter.
- Spread remaining batter over the top, then sprinkle with the remaining brown sugar mixture.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool slightly before serving.
