Luscious Country Apple Fritter Cake

A moist and flavorful apple cake with a fritter-like texture, perfect for breakfast or dessert.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups diced apples (about 2 medium apples)
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Fold in diced apples.
  5. Spread half of the batter into the prepared pan. In a small bowl, mix brown sugar, cinnamon, and walnuts (if using). Sprinkle half of this mixture over the batter.
  6. Spread remaining batter over the top, then sprinkle with the remaining brown sugar mixture.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool slightly before serving.
