Luscious Lemon Zucchini Bread

A moist and flavorful zucchini bread with a refreshing lemon twist.

For the Crust:

  • 2 cups grated zucchini
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9Γ—5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, mix sugar, oil, eggs, lemon zest, lemon juice, and vanilla until well combined.
  4. Stir in the grated zucchini, then gradually add the dry ingredients until just combined.
  5. Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

You can customize the seasonings to taste.
