For the Crust:
- 3 ripe bananas, mashed
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped walnuts
- 1/4 cup buttermilk
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, mix flour, baking soda, and salt. Gradually add to the butter mixture, alternating with mashed bananas and buttermilk. Fold in chopped walnuts.
- Pour batter into prepared cake pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
