Marinated Mozzarella Balls

Fresh mozzarella balls marinated in olive oil with fresh herbs, lemon, and garlic. A simple yet elegant appetizer that can be made ahead.

Ingredients

  • Fresh parsley and/or basil, chopped (2 tablespoons).
  • Fresh lemon juice (2 tablespoons).
  • Lemon zest (2 teaspoons).
  • Garlic clove, grated (1).
  • Red pepper flakes (1/4 teaspoon).
  • Sea salt (1/4 teaspoon).
  • Extra-virgin olive oil (2/3 cup).
  • Fresh mozzarella balls (ciliegine), drained (8 ounces).

Instructions

  1. Mix herbs, lemon, garlic, seasonings and 1/3 cup oil in jar.
  2. Add mozzarella balls and cover with remaining oil.
  3. Refrigerate at least 1 hour before serving.

Notes

Can be made 5 days ahead.
Keep covered in oil.
Best at room temperature.
