Mashed Potato Cheese Puffs

Crispy cheese puffs made with leftover mashed potatoes, perfect for appetizers.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Optional: 1/4 cup chopped chives

Instructions

  1. In a large bowl, combine the mashed potatoes, shredded cheddar cheese, egg, flour, salt, pepper, and garlic powder. Mix until well combined.
  2. If using, stir in the chopped chives.
  3. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Scoop tablespoon-sized portions of the mixture and roll into balls, placing them on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
  6. Remove from the oven and let cool slightly before serving.

Notes

These puffs are best served warm and can be stored in an airtight container for up to 2 days. Reheat in the oven for crispiness.
