- 2 boneless, skinless chicken breasts, sliced

- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted
- 1/2 cup crumbled feta cheese
- 1 cucumber, diced
- Fresh parsley for garnish
Instructions
- Cook the rice according to package instructions and set aside.
- In a bowl, toss the chicken slices with olive oil, oregano, garlic powder, salt, and pepper.
- Heat a skillet over medium heat and cook the chicken for 5-7 minutes per side until fully cooked.
- Assemble the bowls by layering rice, chicken, tomatoes, olives, feta, and cucumber.
- Garnish with fresh parsley and serve immediately.
Notes
For a vegetarian version, substitute chicken with grilled eggplant or chickpeas.
