- 1 pound boneless chicken breasts, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and halved
- 1 lemon, juiced
- 2 medium tomatoes, diced

- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions and set aside.
- Season the chicken breasts with salt, pepper, and oregano.
- Heat olive oil in a skillet over medium heat and cook the chicken for 5-7 minutes per side until golden and fully cooked.
- In a large bowl, combine the cooked rice, grilled chicken, feta cheese, olives, tomatoes, and cucumber.
- Drizzle with lemon juice and toss gently to mix.
- Serve immediately, garnished with additional olives if desired.
Notes
For a vegetarian version, substitute chicken with chickpeas or grilled eggplant.
