Ingredients

  • 1 pound boneless chicken breasts, sliced

  • 1/4 cup Kalamata olives, pitted and halved
  • 1 lemon, juiced
  • 2 medium tomatoes, diced
  • 1 cucumber, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Season the chicken breasts with salt, pepper, and oregano.
  3. Heat olive oil in a skillet over medium heat and cook the chicken for 5-7 minutes per side until golden and fully cooked.
  4. In a large bowl, combine the cooked rice, grilled chicken, feta cheese, olives, tomatoes, and cucumber.
  5. Drizzle with lemon juice and toss gently to mix.
  6. Serve immediately, garnished with additional olives if desired.

Notes

For a vegetarian version, substitute chicken with chickpeas or grilled eggplant.
