Ingredients

  • 2 large cucumbers, sliced
  • 4 ripe tomatoes, chopped
  • 1 red onion, thinly sliced
  • 1/2 cup kalamata olives
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and slice the cucumbers into thin rounds.
  2. Chop the tomatoes into bite-sized pieces.
  3. Thinly slice the red onion.
  4. In a large bowl, combine the cucumbers, tomatoes, onion, and olives.
  5. Sprinkle feta cheese over the top.
  6. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Serve immediately or chill for 30 minutes for enhanced flavors.

Notes

For a vegan version, omit the feta cheese. This salad pairs well with grilled meats or as a light lunch.
