Instructions
- Wash and slice the cucumbers into thin rounds.
- Chop the tomatoes into bite-sized pieces.
- Thinly slice the red onion.
- In a large bowl, combine the cucumbers, tomatoes, onion, and olives.
- Sprinkle feta cheese over the top.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or chill for 30 minutes for enhanced flavors.
Notes
For a vegan version, omit the feta cheese. This salad pairs well with grilled meats or as a light lunch.
