Mediterranean Ground Beef Stir Fry

A quick and healthy stir fry featuring ground beef with Mediterranean herbs, vegetables, and olive oil.

Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic; sauté until softened, about 2 minutes.
  3. Add ground beef and cook until browned, breaking it up with a spoon, about 5 minutes.
  4. Stir in bell pepper, cherry tomatoes, olives, and oregano.
  5. Cook for another 5-7 minutes until vegetables are tender.
  6. Season with salt and pepper, and serve hot.

Notes

For a vegetarian version, substitute ground beef with lentils or mushrooms.
