Mediterranean Ground Beef Stir Fry

Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Feta cheese for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chopped onion and minced garlic; sauté for 2-3 minutes until softened.
  3. Add the ground beef to the skillet; cook and stir until browned and crumbled, about 5-7 minutes.
  4. Stir in the bell pepper, zucchini, cherry tomatoes, olives, oregano, and basil; cook for another 5 minutes until vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with feta cheese.

Notes

For a vegetarian version, substitute ground beef with plant-based crumbles. Pair with rice or pita bread.
