- 1 pound ground beef
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Feta cheese for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the chopped onion and minced garlic; sauté for 2-3 minutes until softened.
- Add the ground beef to the skillet; cook and stir until browned and crumbled, about 5-7 minutes.
- Stir in the bell pepper, zucchini, cherry tomatoes, olives, oregano, and basil; cook for another 5 minutes until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with feta cheese.
Notes
For a vegetarian version, substitute ground beef with plant-based crumbles. Pair with rice or pita bread.
