- For the meatballs:
- 1 pound ground lamb
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin

- For the rice:
- 2 cups cooked basmati rice
- For the tzatziki:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tablespoon fresh dill, chopped
- 1 clove garlic, minced
- Juice of 1 lemon
- Salt to taste
- For the veggies:
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine ground lamb, breadcrumbs, egg, garlic, oregano, cumin, salt, and pepper. Mix well and form into 1-inch meatballs.
- Place meatballs on a baking sheet and bake for 15-20 minutes until cooked through.
- While meatballs are baking, prepare tzatziki by mixing Greek yogurt, grated cucumber, dill, garlic, lemon juice, and salt in a bowl. Refrigerate until ready to use.
- Assemble the bowl by placing cooked rice at the base, adding baked meatballs, fresh veggies, and a dollop of tzatziki on top.
- Garnish with fresh parsley and serve immediately.
Notes
For a vegetarian option, substitute ground lamb with plant-based meat alternatives. Ensure tzatziki is chilled for best flavor.
