  • 1 pound ground lamb
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • For the rice:
  • 2 cups cooked basmati rice
  • For the tzatziki:
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • Juice of 1 lemon
  • Salt to taste
  • For the veggies:
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground lamb, breadcrumbs, egg, garlic, oregano, cumin, salt, and pepper. Mix well and form into 1-inch meatballs.
  3. Place meatballs on a baking sheet and bake for 15-20 minutes until cooked through.
  4. While meatballs are baking, prepare tzatziki by mixing Greek yogurt, grated cucumber, dill, garlic, lemon juice, and salt in a bowl. Refrigerate until ready to use.
  5. Assemble the bowl by placing cooked rice at the base, adding baked meatballs, fresh veggies, and a dollop of tzatziki on top.
  6. Garnish with fresh parsley and serve immediately.

Notes

For a vegetarian option, substitute ground lamb with plant-based meat alternatives. Ensure tzatziki is chilled for best flavor.
