For the Crust:
- 1 lb cooked shrimp, peeled and deveined
- 1 large avocado, diced
- 1 cup tomato juice
- 1/2 cup ketchup
- 1/4 cup fresh lime juice
- 1/4 cup chopped cilantro
- 1/4 cup finely diced red onion
- 1 jalapeño, seeded and minced
- 1 cucumber, peeled and diced
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine tomato juice, ketchup, lime juice, cilantro, red onion, and jalapeño. Mix well.
- Add the cooked shrimp, diced avocado, and cucumber to the sauce. Gently toss to coat.
- Season with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes before serving.
