Mexican Shrimp Cocktail with Avocado

A refreshing and zesty Mexican-style shrimp cocktail with creamy avocado, perfect for a light appetizer or main dish.

For the Crust:

  • 1 lb cooked shrimp, peeled and deveined
  • 1 large avocado, diced
  • 1 cup tomato juice
  • 1/2 cup ketchup
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped cilantro
  • 1/4 cup finely diced red onion
  • 1 jalapeño, seeded and minced
  • 1 cucumber, peeled and diced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine tomato juice, ketchup, lime juice, cilantro, red onion, and jalapeño. Mix well.
  2. Add the cooked shrimp, diced avocado, and cucumber to the sauce. Gently toss to coat.
  3. Season with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes before serving.

Notes

You can customize the seasonings to taste.
