- 1 (4-pound) beef tenderloin, trimmed
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the beef tenderloin dry with paper towels.
- In a small bowl, mix together olive oil, salt, pepper, garlic, rosemary, and thyme.
- Rub the mixture all over the beef tenderloin.
- Place the beef on a roasting rack in a roasting pan.
- Roast in the preheated oven for 25-30 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).
- Remove from the oven and let rest for 15 minutes before slicing.
Notes
For best results, use a meat thermometer to ensure the roast is cooked to your desired doneness. Let the meat rest to retain juices.
