Irresistible Mini Caramel Apple Cheesecake Bites

Delicious mini cheesecakes with a graham cracker crust, creamy cheesecake filling, and topped with caramel apple goodness.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 tbsp sugar
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 medium apple, peeled and diced
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs, melted butter, and 1 tbsp sugar. Press into liners to form crusts.
  3. Beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix well.
  4. Spoon filling over crusts. Bake 15-18 minutes until set. Cool completely.
  5. Cook diced apple with brown sugar and cinnamon until tender. Cool.
  6. Top cheesecakes with apple mixture and drizzle with caramel sauce.
