For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 1 tbsp sugar
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 medium apple, peeled and diced
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- 1/4 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs, melted butter, and 1 tbsp sugar. Press into liners to form crusts.
- Beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix well.
- Spoon filling over crusts. Bake 15-18 minutes until set. Cool completely.
- Cook diced apple with brown sugar and cinnamon until tender. Cool.
- Top cheesecakes with apple mixture and drizzle with caramel sauce.
