For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 6 tablespoons unsalted butter, melted
- 1 cup creamy peanut butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/4 cup chopped peanuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Mix chocolate cookie crumbs and melted butter until combined. Press into the bottoms of 12 lined muffin cups.
- Bake crusts for 8 minutes, then let cool completely.
- In a bowl, beat peanut butter, cream cheese, powdered sugar, and vanilla until smooth.
- In another bowl, whip heavy cream until stiff peaks form. Gently fold into the peanut butter mixture.
- Divide the filling evenly among the cooled crusts. Chill for at least 1 hour.
- Melt chocolate chips and spread over each pie. Sprinkle with chopped peanuts if desired. Chill until set, about 30 minutes.
