Mini Pecan Pies

Delicious mini versions of the classic pecan pie, perfect for holiday gatherings.

Ingredients

  • 1 cup chopped pecans
  • 1 cup white sugar
  • 1/2 cup corn syrup
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 12 mini pie crusts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together the sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until well combined.
  3. Stir in the chopped pecans.
  4. Pour the mixture into the mini pie crusts, filling each about 3/4 full.
  5. Bake in the preheated oven for 25-30 minutes, or until the filling is set.
  6. Allow to cool completely before serving.

Notes

Use fresh pecans for the best flavor. Store leftovers in an airtight container.
