- 1 cup chopped pecans
- 1 cup white sugar
- 1/2 cup corn syrup
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 12 mini pie crusts
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together the sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until well combined.
- Stir in the chopped pecans.
- Pour the mixture into the mini pie crusts, filling each about 3/4 full.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set.
- Allow to cool completely before serving.
Notes
Use fresh pecans for the best flavor. Store leftovers in an airtight container.
