  2. Melt the Chocolate and Butter:In a heatproof bowl, combine the unsalted butter and chopped bittersweet chocolate. Place the bowl over a saucepan of simmering water and stir until the mixture is completely smooth. Remove from heat and set aside.
  3. Combine Dry Ingredients:In a separate bowl, whisk together the granulated sugar, all-purpose flour, and a pinch of salt. This dry mixture will balance the rich flavors of the chocolate.
  4. Mix Wet Ingredients:In another bowl, whisk together the eggs, egg yolks, and vanilla extract until the mixture is smooth and slightly frothy.
  5. Blend Everything Together:Gently fold the melted chocolate mixture into the egg mixture, ensuring that everything is well incorporated. Then, gradually add the dry ingredients, folding until just combined. Be careful not to overmix, as this can affect the texture of your cupcakes.
  6. Prepare the Filling:In a small bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. This will be the surprise creamy filling inside your cupcakes.
  7. Assemble the Cupcakes:Fill each cupcake liner halfway with the chocolate batter. Add a spoonful of the cream cheese mixture to the center of each, then top with more chocolate batter until the liners are about 3/4 full.
