No-Bake Berry Cheesecake

A creamy and delicious no-bake cheesecake topped with fresh berries, perfect for any occasion.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup berry jam (for glaze)

Instructions

1. Prepare the Crust:

  1. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press firmly into the bottom of a 9-inch springform pan and refrigerate for 15 minutes.
  2. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Spread the cream cheese mixture evenly over the chilled crust. Smooth the top with a spatula and refrigerate for at least 4 hours or overnight.
  5. Before serving, arrange the fresh berries on top of the cheesecake. Warm the berry jam slightly and drizzle over the berries for a glossy finish.

Notes

You can customize the seasonings to taste.
