For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- 1 tsp vanilla extract
- 1 can (21 oz) cherry pie filling
- Whipped cream for garnish
Instructions
1. Prepare the Crust:
- In a bowl, mix chocolate cookie crumbs with melted butter until well combined.
- Press the mixture firmly into a 9-inch pie dish to form the crust. Chill for 15 minutes.
- In a saucepan, heat heavy cream until just simmering. Remove from heat and add chopped chocolate and vanilla. Stir until smooth.
- Pour the chocolate mixture over the chilled crust and spread evenly. Refrigerate for 1 hour or until set.
- Top the pie with cherry pie filling and chill for another 30 minutes.
- Garnish with whipped cream before serving.
