For the Crust:
- 1 cup chopped pecans
- 1 cup shredded coconut
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup butter
- 1 tsp vanilla extract
- 1 1/2 cups quick oats
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine brown sugar, milk, and butter. Bring to a boil over medium heat, stirring constantly.
- Boil for 1 minute, then remove from heat and stir in vanilla extract.
- Add pecans, coconut, and oats to the mixture. Stir until well combined.
- Drop spoonfuls of the mixture onto wax paper or parchment paper. Let cool until set, about 30 minutes.
