Instructions

  1. Remove the steaks from the refrigerator 30-60 minutes before cooking to allow them to reach room temperature.
  2. Pat the steaks dry with paper towels to remove excess moisture, ensuring a better sear.
  3. Season both sides generously with salt and black pepper.
  4. Preheat a cast iron skillet or heavy pan over medium-high heat until it is hot.
  5. Add the canola oil to the pan and swirl to coat the bottom.
  6. Carefully place the steaks in the hot pan, ensuring they are not crowded. You should hear a satisfying sizzle.
  7. Let the steaks sear for about 4-5 minutes without moving them.
  8. Flip the steaks using tongs and sear the other side for another 4-5 minutes.
  9. In the last minute of cooking, add the butter, crushed garlic, and thyme to the pan.
