Peanut Brittle

A quick and easy microwave peanut brittle with crispy texture and caramel-like flavor. Perfect for holiday gifting.

Ingredients

Scale
  • 1 cup granulated sugar.
  • 1/2 cup corn syrup.
  • 1 cup roasted salted peanuts.
  • 1 tablespoon butter.
  • 1 teaspoon vanilla extract.
  • 1 teaspoon baking soda.

Instructions

  1. Line sheet pan with silicone mat or parchment.
  2. Mix sugar and corn syrup in glass bowl.
  3. Microwave 4 minutes on high.
  4. Add peanuts, microwave 3-4 minutes until light brown.
  5. Add butter and vanilla, microwave 1 minute.
  6. Stir in baking soda.
  7. Pour immediately onto prepared pan.
  8. Cool 1 hour until hardened.
  9. Break into pieces.

Notes

Watch cooking times carefully.
Must reach high temperature.
Work quickly after baking soda.
Great for gifting.
