- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups chopped pecans
- 1 cup pecan halves for topping
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt; gradually add to the creamed mixture.
- Fold in chopped pecans.
- Drop dough by tablespoonfuls onto prepared baking sheets and press a pecan half on top of each.
- Bake for 10-12 minutes or until edges are lightly browned.
- Cool on wire racks.
Notes
For a crispier cookie, chill the dough for 30 minutes before baking.
