Pecan Pie Cookies

These cookies combine the flavors of pecan pie in a bite-sized treat.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped pecans
  • 1 cup pecan halves for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually add to the creamed mixture.
  5. Fold in chopped pecans.
  6. Drop dough by tablespoonfuls onto prepared baking sheets and press a pecan half on top of each.
  7. Bake for 10-12 minutes or until edges are lightly browned.
  8. Cool on wire racks.

Notes

For a crispier cookie, chill the dough for 30 minutes before baking.
