Ingredients

  • 4 medium sweet potatoes
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg, beaten

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 1 hour or until tender.
  2. Let cool, then cut in half and scoop out the flesh into a bowl, leaving a thin layer in the skins.
  3. Mash the scooped flesh and mix with butter, brown sugar, pecans, vanilla, cinnamon, salt, and egg.
  4. Spoon the mixture back into the potato skins and bake for another 15-20 minutes at 350°F (175°C).
  5. Serve warm.

Notes

For a healthier version, use coconut sugar instead of brown sugar.
