- 2 and 1/4 cups (281g) all-purpose flour.
- 1/2 teaspoon baking powder.
- 1/4 teaspoon salt.
- 3/4 cup (170g) unsalted butter, softened to room temperature.
- 3/4 cup (150g) granulated sugar.
- 1 large egg, at room temperature.
- 2 teaspoons pure vanilla extract.
- 1/4 or 1/2 teaspoon almond extract (optional).
Instructions
- Whisk flour, baking powder, and salt together in medium bowl.
- Beat butter and sugar on high speed until smooth and creamy, about 3 minutes.
- Beat in egg, vanilla, and almond extract until combined, about 1 minute.
- Mix dry ingredients into wet ingredients on low speed. Add extra flour if dough is too sticky.
- Divide dough in half, roll each portion to 1/4-inch thickness between floured parchment.
- Stack rolled dough with parchment between layers, refrigerate 1-2 hours.
- Cut shapes, bake at 350°F for 11-12 minutes until lightly browned at edges.
Notes
Room temperature ingredients are essential.
Dough can be chilled up to 2 days.
Can be flavored with different extracts.
Re-roll scraps to use all dough.
