Pineapple Coconut Dream Cake

A tropical delight combining the sweetness of pineapple with the creamy richness of coconut in a moist and fluffy cake.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup crushed pineapple, drained
  • 1/2 cup coconut milk
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with coconut milk.
  6. Fold in crushed pineapple and shredded coconut until just combined.
  7. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
