Pineapple Cowboy Candy

A sweet and spicy candied pineapple that adds a kick to any meal.

For the Crust:

  • 1 fresh pineapple, peeled and sliced into rings
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup apple cider vinegar
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves

Instructions

1. Prepare the Crust:

  1. In a medium saucepan, combine granulated sugar, brown sugar, apple cider vinegar, red pepper flakes, cinnamon, and cloves. Bring to a boil over medium heat, stirring until sugars dissolve.
  2. Add pineapple rings to the syrup, reduce heat to low, and simmer for 20-25 minutes until pineapple is translucent and syrup thickens.
  3. Remove pineapple rings from syrup and let cool on a wire rack. Reserve syrup for glazing or serving.
  4. Once cooled, store pineapple cowboy candy in an airtight container in the refrigerator for up to two weeks.
