For the Crust:
- 1 fresh pineapple, peeled and sliced into rings
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup apple cider vinegar
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine granulated sugar, brown sugar, apple cider vinegar, red pepper flakes, cinnamon, and cloves. Bring to a boil over medium heat, stirring until sugars dissolve.
- Add pineapple rings to the syrup, reduce heat to low, and simmer for 20-25 minutes until pineapple is translucent and syrup thickens.
- Remove pineapple rings from syrup and let cool on a wire rack. Reserve syrup for glazing or serving.
- Once cooled, store pineapple cowboy candy in an airtight container in the refrigerator for up to two weeks.
