Instructions
- In a large pot, brown the Portuguese sausage over medium heat. Remove and set aside.In the same pot, add the ham hock, onion, and garlic. Sauté until the onions are translucent.Add the carrots, potatoes, kidney beans, tomato sauce, and water. Bring to a boil.Reduce heat and simmer for 1-2 hours, or until the meat is tender and falls off the bone.Remove the ham hock, shred the meat, and return to the pot.Add the chopped cabbage and cooked Portuguese sausage. Simmer for an additional 15-20 minutes.Season with salt and pepper to taste. Add macaroni pasta if desired, and cook until tender.Serve hot and enjoy!
