Perfect Pumpkin Chocolate Chip Cupcakes Recipe with Cream Cheese Frosting

  • 1 boxed yellow cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 cup pumpkin puree
  • 1/3 cup dark brown sugar
  • 1 1/4 tsp pumpkin pie spice
  • 1 cup mini chocolate chips
  • Cream Cheese Frosting
  • 8 oz cream cheese; softened
  • 1/2 cup butter; softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 1/4 tsp pumpkin pie spice
  • 1/2 cup toasted coconut

Instructions

  1. Cupcakes:
  2. Preheat oven to 350 degrees.
  3. In a large bowl combing cake mix, water, oil, eggs, pumpkin, brown sugar, and pumpkin pie spice. Beat with a mixer for 30 seconds on low, then 2 more minutes on high speed. Fold in chocolate chips.
  4. Line cupcake pan with paper liners and fill each cup 2/3 of the way.
  5. Bake for 20-22 minutes. Remove from oven and let cool.
  6. Cream Cheese Frosting:
  7. In a mixing bowl combine cream cheese, vanilla, pumpkin pie spice, and butter. Beat with a mixer until smooth and fluffy.
  8. While mixing add 1 cup of powdered sugar at a time until combined.
  9. Frost cupcakes with the frosting, and sprinkle with a little toasted coconut on top. Enjoy!
