Pumpkin Pecan Honey Bun Cake

A moist and flavorful pumpkin cake topped with a crunchy pecan and honey glaze, perfect for fall.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1/4 cup honey

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. While the cake is baking, mix chopped pecans and honey in a small bowl.
  8. Once the cake is done, spread the pecan-honey mixture evenly over the top while still warm.
  9. Let cool slightly before serving.
