Pumpkin S’mores Cookies

Soft pumpkin cookies stuffed with gooey marshmallows and chocolate, inspired by the classic s’mores flavor.

For the Crust:

  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup mini marshmallows
  • 1 cup chocolate chips
  • 1/2 cup graham cracker crumbs

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy. Add pumpkin puree, egg, and vanilla extract; mix well.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually add dry ingredients to wet ingredients, mixing until combined.
  4. Fold in mini marshmallows, chocolate chips, and graham cracker crumbs.
  5. Drop tablespoon-sized dough portions onto prepared baking sheets, spacing them 2 inches apart.
  6. Bake for 12-14 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

You can customize the seasonings to taste.
