- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup sour cream
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix shredded chicken with 1/2 cup enchilada sauce, onions, salt, and pepper.
- Spoon the mixture into tortillas and roll them up.
- Place the rolled tortillas in a baking dish and top with remaining enchilada sauce and cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Serve with sour cream on top.
Notes
For a spicier version, add jalapeños to the chicken mixture.
