Ravioli with Tomatoes and Asparagus

A light and fresh pasta dish featuring cheese ravioli, cherry tomatoes, and asparagus in a garlic butter sauce.

For the Crust:

  • 1 package (9 oz) cheese ravioli
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook ravioli according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add asparagus and sauté for 3-4 minutes until tender-crisp.
  3. Add cherry tomatoes and garlic to the skillet. Cook for another 2 minutes until tomatoes soften.
  4. Stir in butter until melted. Add cooked ravioli and toss gently to coat.
  5. Sprinkle with Parmesan cheese, salt, and pepper. Serve immediately.

Notes

You can customize the seasonings to taste.
