For the Crust:
- 1 package (9 oz) cheese ravioli
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 pint cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 tsp red pepper flakes
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook ravioli according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
- Add asparagus and cook for 3-4 minutes until tender-crisp.
- Stir in cherry tomatoes and cook for another 2 minutes until slightly softened.
- Add cooked ravioli to the skillet and toss gently to combine. Season with salt and black pepper.
- Sprinkle with Parmesan cheese before serving.
