Ravioli with Tomatoes and Asparagus

A light and flavorful pasta dish featuring cheese-filled ravioli, fresh tomatoes, and crisp asparagus.

For the Crust:

  • 1 package (9 oz) cheese ravioli
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 pint cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook ravioli according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add asparagus to the skillet and cook for 3-4 minutes until tender-crisp.
  4. Stir in cherry tomatoes and cook for another 2 minutes until slightly softened.
  5. Add cooked ravioli to the skillet and toss gently to combine with the vegetables.
  6. Season with salt, black pepper, and red pepper flakes. Sprinkle with Parmesan cheese before serving.

You can customize the seasonings to taste.
