For the Crust:
- 1 box red velvet cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup all-purpose flour
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Scoop teaspoon-sized balls onto a plate and freeze for 30 minutes.
- In another bowl, mix cake mix, eggs, oil, and flour until combined. Take 2 tbsp of dough, flatten, place a cheesecake ball in the center, and wrap dough around it. Repeat for all cookies.
- Bake for 10-12 minutes until edges are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
