For the Crust:
- 1 box red velvet cake mix
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup all-purpose flour
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix cream cheese, sugar, and vanilla until smooth. Scoop teaspoon-sized balls onto a plate and freeze for 30 minutes.
- In another bowl, combine cake mix, eggs, melted butter, and flour to form a dough.
- Take a tablespoon of cookie dough, flatten it, place a cheesecake ball in the center, and wrap the dough around it. Repeat for all cookies.
- Bake for 12-15 minutes or until edges are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
