For the Crust:
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup heavy cream
- 1 1/2 cups Reese’s peanut butter cups, chopped
- 1/4 cup chocolate syrup (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
- Mix chocolate cookie crumbs and melted butter. Press into the bottom of the pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add peanut butter and vanilla, mixing well.
- Beat in eggs one at a time, then stir in heavy cream until fully combined.
- Fold in 1 cup of chopped Reese’s peanut butter cups. Pour mixture over the crust.
- Bake for 50-60 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours.
- Garnish with remaining peanut butter cups and drizzle with chocolate syrup before serving.
