Refreshing Lemon Blueberry Cheesecake Bars

A delightful dessert combining tangy lemon, sweet blueberries, and creamy cheesecake on a buttery graham cracker crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup blueberry jam (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325Β°F (165Β°C). Line an 8Γ—8 baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan to form the crust.
  3. Bake crust for 10 minutes, then remove and let cool slightly.
  4. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in sour cream, lemon juice, zest, and vanilla.
  5. Gently fold in blueberries. Pour filling over crust and smooth the top.
  6. Bake for 35-40 minutes until center is just set. Cool completely at room temperature.
  7. Warm blueberry jam slightly and drizzle over cooled bars. Chill for at least 4 hours before slicing.

Notes

You can customize the seasonings to taste.
