For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup sour cream
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- 1/4 cup blueberry jam (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (165Β°C). Line an 8Γ8 baking pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan to form the crust.
- Bake crust for 10 minutes, then remove and let cool slightly.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in sour cream, lemon juice, zest, and vanilla.
- Gently fold in blueberries. Pour filling over crust and smooth the top.
- Bake for 35-40 minutes until center is just set. Cool completely at room temperature.
- Warm blueberry jam slightly and drizzle over cooled bars. Chill for at least 4 hours before slicing.
