Roasted Carrots with Whipped Ricotta and Hot Honey

Roasted carrots are tossed with a spicy honey glaze and served over creamy whipped ricotta for a flavorful side dish.

Ingredients

  • 1 pound carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes
  • Fresh herbs for garnish

Instructions

  1. Preheat the oven to 425°F.
  2. Toss carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20-25 minutes until tender.
  4. In a bowl, whip ricotta with a hand mixer until smooth.
  5. Mix honey and red pepper flakes for the hot honey.
  6. Spread whipped ricotta on a plate, top with roasted carrots, and drizzle with hot honey.
  7. Garnish with fresh herbs and serve.

Notes

For a milder version, reduce the red pepper flakes. Best served fresh.
