- 1 pound carrots, peeled and trimmed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 tablespoon honey
- 1/2 teaspoon red pepper flakes
- Fresh herbs for garnish
Instructions
- Preheat the oven to 425°F.
- Toss carrots with olive oil, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes until tender.
- In a bowl, whip ricotta with a hand mixer until smooth.
- Mix honey and red pepper flakes for the hot honey.
- Spread whipped ricotta on a plate, top with roasted carrots, and drizzle with hot honey.
- Garnish with fresh herbs and serve.
Notes
For a milder version, reduce the red pepper flakes. Best served fresh.
