Roasted Chicken with Garlic and Herbs

A simple yet flavorful roasted chicken dish infused with garlic and fresh herbs.

For the Crust:

  • 1 whole chicken (34 lbs)
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper.
  3. Rub the herb mixture all over the chicken, including under the skin.
  4. Place the lemon halves inside the chicken cavity.
  5. Roast the chicken for 1 hour 15 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before carving.
