For the Crust:
- 1 whole chicken (3–4 lbs)
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, halved
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a small bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub the herb mixture all over the chicken, including under the skin.
- Place the lemon halves inside the chicken cavity.
- Roast the chicken for 1 hour 15 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving.
