- 4 medium golden beets, trimmed and scrubbed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces burrata cheese
- 1/4 cup shelled pistachios, chopped
- 1 large orange, segmented
- 1 grapefruit, segmented
- 1 handful micro basil leaves
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the beets with olive oil, salt, and pepper, then wrap individually in foil.
- Roast the beets in the oven for 45-50 minutes, or until tender. Let cool, then peel and slice into 1/4-inch rounds.
- On serving plates, stack the beet slices alternately with burrata pieces.
- Top the stacks with chopped pistachios, orange segments, grapefruit segments, and micro basil leaves.
- Drizzle with any remaining olive oil and season with additional salt and pepper if needed.
- Serve immediately.
Notes
For the best flavor, use fresh, in-season citrus and high-quality burrata cheese.
