Ingredients

  • 4 medium golden beets, trimmed and scrubbed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces burrata cheese
  • 1/4 cup shelled pistachios, chopped
  • 1 large orange, segmented
  • 1 grapefruit, segmented
  • 1 handful micro basil leaves

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the beets with olive oil, salt, and pepper, then wrap individually in foil.
  3. Roast the beets in the oven for 45-50 minutes, or until tender. Let cool, then peel and slice into 1/4-inch rounds.
  4. On serving plates, stack the beet slices alternately with burrata pieces.
  5. Top the stacks with chopped pistachios, orange segments, grapefruit segments, and micro basil leaves.
  6. Drizzle with any remaining olive oil and season with additional salt and pepper if needed.
  7. Serve immediately.

Notes

For the best flavor, use fresh, in-season citrus and high-quality burrata cheese.
