Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 roasted red peppers, sliced
  • 1 cup fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly each chicken breast by slicing horizontally through the middle.
  3. Stuff each chicken breast with sliced roasted red peppers, fresh spinach, and shredded mozzarella cheese.
  4. Season the stuffed chicken breasts with minced garlic, salt, and pepper.
  5. Heat olive oil in a skillet over medium heat and sear the chicken breasts on both sides until golden.
  6. Transfer to the oven and bake for 20-25 minutes, or until the chicken is cooked through.

Notes

For a healthier option, use low-fat mozzarella cheese. Ensure chicken reaches an internal temperature of 165°F.
