- 2lb hot breakfast sausage
- 1(8-oz) package cream cheese, softened
- 1(10-oz) can Rotel diced tomatoes and green chilies, drained
- 1(30-32oz) bag frozen tater tots
- 1 tspsalt, or to taste
- ½ tsppepper, or to taste
- ¼ tspgarlic powder
- ¼ tsponion powder
- 2 cupsshredded cheddar cheese
- 8large eggs
- 2 cupsmilk
Instructions
- Preheat the Oven:Preheat your oven to 350ºF (175ºC). Lightly spray a 9×13-inch baking dish with cooking spray.
- Cook the Sausage:In a large skillet, cook the sausage over medium heat until it’s browned and no longer pink. Drain any excess fat from the skillet.
- Combine with Cream Cheese and Rotel:Add the softened cream cheese and drained Rotel to the skillet with the cooked sausage. Stir until well combined and creamy.
- Mix with Tater Tots and Cheese:In a large mixing bowl, combine the frozen tater tots, sausage and cream cheese mixture, and shredded cheddar cheese. Toss until everything is evenly distributed.
- Transfer to Baking Dish:Pour the mixture into the prepared 9×13-inch baking dish, spreading it out evenly.
- Prepare the Egg Mixture:In a separate bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk until well combined.
- Pour Over Tater Tot Mixture:Slowly pour the egg mixture over the tater tot mixture in the baking dish, ensuring it covers the entire surface.
- Bake:Bake the casserole, uncovered, in the preheated oven for 60 to 70 minutes, or until the eggs are set and the top is golden brown.
- Serve:Let the casserole cool for a few minutes before serving. Enjoy this hearty dish for breakfast, brunch, lunch, or even dinner!
