Rotel Sausage Cream Cheese Tater Tot Breakfast Casserole Recipe

Ingredients

Scale
  • 2lb hot breakfast sausage
  • 1(8-oz) package cream cheese, softened
  • 1(10-oz) can Rotel diced tomatoes and green chilies, drained
  • 1(30-32oz) bag frozen tater tots
  • 1 tspsalt, or to taste
  • ½ tsppepper, or to taste
  • ¼ tspgarlic powder
  • ¼ tsponion powder
  • 2 cupsshredded cheddar cheese
  • 8large eggs
  • 2 cupsmilk

Instructions

  1. Preheat the Oven:Preheat your oven to 350ºF (175ºC). Lightly spray a 9×13-inch baking dish with cooking spray.
  2. Cook the Sausage:In a large skillet, cook the sausage over medium heat until it’s browned and no longer pink. Drain any excess fat from the skillet.
  3. Combine with Cream Cheese and Rotel:Add the softened cream cheese and drained Rotel to the skillet with the cooked sausage. Stir until well combined and creamy.
  4. Mix with Tater Tots and Cheese:In a large mixing bowl, combine the frozen tater tots, sausage and cream cheese mixture, and shredded cheddar cheese. Toss until everything is evenly distributed.
  5. Transfer to Baking Dish:Pour the mixture into the prepared 9×13-inch baking dish, spreading it out evenly.
  6. Prepare the Egg Mixture:In a separate bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk until well combined.
  7. Pour Over Tater Tot Mixture:Slowly pour the egg mixture over the tater tot mixture in the baking dish, ensuring it covers the entire surface.
  8. Bake:Bake the casserole, uncovered, in the preheated oven for 60 to 70 minutes, or until the eggs are set and the top is golden brown.
  9. Serve:Let the casserole cool for a few minutes before serving. Enjoy this hearty dish for breakfast, brunch, lunch, or even dinner!

Notes

Use Quality Sausage:The sausage you choose greatly influences the overall flavor. Opt for high-quality sausage for the best taste.
Don’t Overmix:When combining the ingredients, mix just enough to distribute everything evenly. Overmixing can cause the tater tots to break apart too much.
Make Ahead:You can prepare this casserole the night before and refrigerate it. In the morning, simply pop it in the oven, and you’ll have a hot breakfast ready in no time.
